Pumpkin Oatmeal Pancakes


Pumpkin Oatmeal Pancakes are an easy, scrumptious and healthy breakfast concept for fall. Serve them with Greek yogurt to dip in—the youngsters will like it!





Ingredients
  • 2 cups Old Fashioned Oats
  • 2 cups Egg Whites
  • 2 cups Pumpkin Purée
  • 1 cup Greek Yogurt
  • 1 Tablespoon Favorite Sweetener
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Pumpkin Pie Spice
  • 1 pinch Salt (non-compulsory)



Preparation

Add oats to a meals processor and method till finely floor. Don’t worry if it doesn’t appear like store-offered flour although.

Add all closing elements and process till clean and nicely blended. Let sit down for five minutes.

Heat a griddle or nonstick pan over medium-high warmness. Lightly spray with oil. Add 1/four cup of batter according to pancake to the new pan or griddle. Cook until bubbles appear on the floor. Flip carefully and finish cooking on the other side.

Serve heat with Greek yogurt for dipping and a small sprinkling of pecans, if you like.
