Creamy Roasted Sweet Potato Soup

Roasted sweet potatoes and onions impart delicious intensity of flavour to this Creamy Roasted Sweet Potato Soup. Top it off with the deliciousness of bacon, if you like!



Ingredients

  1. 2 pounds Sweet Potatoes, Peeled And Cut Into half-inch Cubes
  2. 1  Onion, Chopped Into half-inch Pieces
  3. 2 Tablespoons Avocado Oil
  4. 1 teaspoon Thyme
  5. 1 teaspoon Cumin
  6. ½ teaspoons Sea Salt
  7. 4 cups Broth
  8. ¼ teaspoons Black Pepper
  9. 1-½ cup Coconut Milk (canned)
  10. 4 strips Francis Bacon, Cooked And Chopped, For Garnish (optionally available)
  11. Chopped Parsley For Garnish (optionally available)


Manual

Preheat oven to 450ºF. Toss vegetables with oil, thyme, cumin, and salt. Roast on foil-covered baking sheet for 25 mins or till gentle.

Meanwhile, warmness inventory in a massive pot. When greens are finished, add to the stock at the side of black pepper and coconut milk.

Using an immersion blender, puree till as clean as desired. Allow soup to simmer and mix the flavours till ready to serve.

Garnish with chopped bacon and parsley just earlier than serving, if preferred.
