Sausage Egg Vegetable Breakfast

Great simple breakfast bowl made with plenty of protein and vegetables.



Ingredients
  • ½ pounds floor pork sausage (or your preferred sausage)
  • 2 tablespoons olive oil
  • 1  small onion, diced
  • 1 cup potato, diced
  • Four  eggs, crushed
  • Salt and pepper, to flavor
  • 1  roma tomato, diced
  • 1 cup shredded sharp cheddar cheese
