Black Bean Lasagna


Vegetarian black bean lasagna.


Ingredients
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 complete bell pepper, any shade, diced
  • 1 whole (14.5 ounces) can black beans, tired and rinsed
  • four teaspoons basil, divided
  • 2 teaspoons oregano, divided
  • 2 teaspoons marjoram, separated
  • four teaspoons italian seasoning, divided
  • 16 ounces, weight box ricotta cheese (or cottage cheese)
  • 3 tablespoons chopped clean basil (optionally available)
  • ½ cups shredded mozzarella cheese
  • ¼ cups grated parmigiano reggiano cheese
  • 1 entire (28 oz.) Can tomato sauce (or jar of pasta sauce)
  • ½ teaspoons overwhelmed pink pepper flakes
  • 6 whole lasagna noodles, cooked according to bundle instructions and drained

Make the filling for the rolls:

In a small nonstick pan over medium warmth, sauté garlic in a tablespoon of oil for about 2 mins. Add bell pepper, black beans, and 1-2 teaspoons of each the dried spices.
